This wonderful cake recipie was contributed by our neighbor, Pat Weatherford. Thank you Pat!
4 Ripened Bartlet Pears Peeled and Diced (about 3 cups).
1 Tbsp Sugar
3 Large Eggs
2 Cups Sugar
1 1/4 Cups Vegetable Oil
3 Cups All Purpose Flour
1 Tsp. Salt
1 Tsp. Baking Soda
1 1/2 Cups Corsely Chopped Pecans
2 Tsp. Vanilla
Toss together pears and 1 tbsp. sugar; let stand 5 min. Beat eggs, 2 cups sugar and oil at medium speed with mixer until blended. Combine flour, salt and soda and add to egg mixture, beating a low speed until blended. Fold in pears, chopped pecans and vanilla. Pour batter into a greased adn floured Bundt pan. Bake at 350 for 1 hour or until a wooden toothpick inserted in center comes out clean. Remove from pan and drizzle caramel glaze over warm cake.
Caramel Glaze
1 cup firmly packed brown sugar
1/2 cup butter
1/4 cup evaporated milk
Stir together over medium heat, bring to a boil stirring constantly until sugar dissolves and cook for 3 minutes.
